Definitely focus on ONE in the beginning. When your first site is up and running and earning traffic and revenue, then you can consider leveraging that with a second site.
If you have multiple website projects, the possibility is there that you will repeat mistakes across all of them...(we all make mistakes...lol). Plus you will need to drive traffic to two websites instead of one.
Start with a niche that you enjoy the most. That's always the best way to get rolling. You can be successful with one great authority website.
