Ive currently only got two pages on my site and its the privacy page, and the home page. I'm not sure what the difference is and if i should be creating more pages.

That is a good question the difference between the page and the post is: A page doesn't have comments on it as a post does and it also includes what RenaeG said too. One more thing is that your pages would be your about me, privacy policy, affiliate disclosures are all pages anything else is posts.

I think the difference in Page vs Post is that the pages are for what will not change, and is a stand-alone article. A post will be articles that will be changing over time, more info added, or a new one to take its place. Also you can put more than one post on the same page. A living document.

A page is where you are not able to put comments and a post is where comments are allowed. When you create new articles, you want to put them as a post so that people who visit your site can write comments. The more comments you have in your articles, the more trust you build with your audience and the higher your website will rank on Google. I don't remember the other differences at the moment haha! The second question you have is one which I'm not entirely sure about either so I can't be much help on that. But I hope this clarifies things a bit!

Although I don't do it, I can allow comments on pages on my site and it appears I can add them from the back end as well.

Yep..it's an option...it's just not on by default.

Pages are for more static content that you’d want in your menu and what not. Think of your disclaimer, privacy policy, about me and so on as static content that should be on a page. Posts are more your articles you write and will possibly grow stale as time passes, requiring maintenance, updates or new posts to replace them (think Xbox 360 giving way to Xbox one, etc.). Posts will be placed on the blog roll and newer posts will push older ones down the list.
