The more inline these products are with your content, the higher you will convert. For example, if you are getting traffic from the keyword "best healthy chicken recipes" and you have a page with corresponding content, a chicken recipe cookbook would probably convert quite well.
Remember, there are pretty much affiliate programs for anything you can imagine out there and you can find them with just a little research. You will want to join the programs you think will be a good offering.

When it comes to affiliate programs vs. ad revenue, we typically say "why work with pennies when you can work with dollars". This is many times the case because with a well aligned affiliate product offer on your site, you can do quite well and it will be much more profitable than Adsense. This is something that you should test though.
Key to Finding ANY affiliate program
If you don't find the affiliate program that you want within one of the networks (above), then you can do a quick search in Google to find affiliate programs. Say I was looking to find an affiliate program for "remote control air planes".
If I simply do a search in Google for:
remote control airplanes + affiliate program
Here are the results:
In a minute I have already come up with at least 3 affiliate programs for remote control airplanes. Who would have thought!
Here is an example of what an affiliate link would look like if you signed-up to Clickbank and were promoting, say Strip That Fat, a dieting product.
That is the raw link. If you want to add it directly to the HTML within a page or the post instead of using the link button within the editor, you need to add the HTML. It would look like this:

Now, if someone went through that link and decided to join this program you would earn $37 per sale. This is just one example of an affiliate product out there...think of the potential of this if you could make 5-10 affiliate sales per day (or more!).
