Upon activating the plugin, you are prompted with a Setup Wizard.
At the bottom, you can skip set-up wizard. Up to you.
As you see, in both examples (wizard and reg woocommerce settings) This is where you add your store adress. (shipping address).
If you do not use the wizard, continue to WooComerce > Settings tab.
The address is a default entry to use as admin when validating your payment services. You can insert your shipping address here (by removing the default address)

Next, you'll see:
You can now set up your selling region. In the dropdown, you will see various countries that you can individually select, or add all countires. This is my set-up, and currently, I'm selling only to the Us and Canada.
The last section (under General) is currency:
Here, you can select the currency you will use, decimal placement, thousand separator.
SAVE changes.
