If I'm not happy with my first Niche choice, can I change it? If so do I rebuild my site or just start building another?

Yes but you may need to buy a new domain for your new niche

better to be working on something that you really, truly like as one needs to blog / write in-depth, extensively over a period of time to accomplish a successful on-line biz ... it's a major investment of your time & energy, so make it a good one!

and as Craig (Labman) has said, best to start anew, fresh ...

My suggestion is that you start from scratch, ... clean and fresh!
No limits.
Give the New Year a new start.

You can certainly make a change if you choose. You will want to make sure that your URL is relevant to your new niche if you want to build your site in a different direction.

In most cases, it is best to start fresh with a new site for the new niche.

I'm a little confused about keywords. what exactly am i looking for? then what do i do with them once i find them?

As what I understood about key words are, it’s a phrase or words that you can insert as part of your writings or blogs depending on your nice. Or you can create your blog around these key words to direct traffic in your website.

So how it works is that when an audience or a reader is searching for something and typed these keywords in google search it will have your website in there depending on how strong your key words are!

Under research is Jaaxy where you can search for keywords and see the rankings of these keywords!
