How do I prevent payments from automatically happening for premium membership?

The only way to stop automatic payments is to cancel. WA doesn't bill you, they simply bill the card or PayPal account on file when your renewal is up. You can see when the next charge will be and how much by clicking on your profile picture in the upper-left here and selecting Account Settings. Once that page loads click on Membership. You can also change your payment source by clicking on Payment Source.
You may want to consider going annual. Not only will it save you quite a bit of money but then you only have to worry about renewal charges once a year.
You can cancel anytime before the due date of your next cycle but two things to note
1 you cannot go back to starter once you have gone premium
2 if you cancel an auto payment you would need to stop billing which in turn cancels your membership.
You can always return where you continued but doing so would mean you need to cancel each and every time if you want to stay a premium member.

If I search for a particular "best (product name) under 1000" would it hurt to add a dollar symbol or even a comma to make it "best (product name) under $1,000"? My concern is
Using punctuation such as the $ sign won't affect the keyword at all, as Google doesn't really take it into account. For example, if you just searching for (product name) under $1000, the Google prompts won't include the $ sign. So yes, definitely include the $ within your keyword, title etc. because it would look weird otherwise.

When you click on Posts in Word Press, You will see a summary of your posts with different columns. Under the column "tags", should this display something? All mine are blank
You only use SEO title when you want the title in rich snippets to be different from the title in your blog. If you're following the guidelines here as trained, you won't need an SEO title as it's already optimized for SEO.

Header 'tags' are not tags at all, but WordPress formatting, i.e., H1, H2, H3, which generally are different font/sizes used for formatting your posts.
From how I understand it, it is hierarchical, but should not be repeated for H1/H2 - by the time you get to H3 you can have as many as you like. Google focuses on H1 for the most part (i.e., the title).

I've seen different theories on domain names with keywords. Does it really help your ranking if you have keywords within the domain name versus a unique brand name for your sit
Keywords in the name do not help, but they also don't hurt! My website has keywords, but just because I wanted to be clear about what my site was on so users can easily find what they need. If your unique brand name makes sense and is relevant to what your site is about, then definitely go for it!!

Keywords in the name do not help, but they also don't hurt! My website has keywords, but just because I wanted to be clear about what my site was on so users can easily find what they need. If your unique brand name makes sense and is relevant to what your site is about, then definitely go for it!!
