I'm wanting to adjust my website name, can I change it after it has been build? I haven't posted anything yet?
unfortunately you cannot change the domain name and would have to make a new one. fortunately you haven't posted anything, although if you did you could backup the site and transfer it to the new domain!
Thanks, I was looking at my list of niche and chose one to go through the start up process before I actually do anything big...I'm trying to get familiar with it first

Do you mean the URL? The address people type to get to your site - mine looks like this http://pillowsforpain.com
OR the name that displays in the header on the site once people arrive at the site?
If it's the URL, you will have to buy another domain that is the name you want it to be if it is available
If it's the second, on the dashboard that runs down the left side of Wordpress hover over Appearance and click on Customize. When that page loads, click the top option "Site Identity". Type the new name where it says "Site Title".

second question, does my domain ID have to be the same as my niche? and if so, if I delete said domain/ website would I be able to come back to WA and remake it again?

No, you can stay and remake it.
You can not come back and start over.
