Posts are meant to be in the blog roll, but you can have them also in some other places.I do not know the way to remove it from the blog roll and to keep in other places.
One option is: make a page from it (using one plugin, which you deactivate after that), then use another plugin to add categories and tabs to pages (this plugin must remain active afterwards). That way you will have your page in categories wherever they appear, and also in the main menu.
I just wonder, why do you want to do this? What is woing in having the post where it already is?
It's been recommended through SiteFeedback to remove it from the blog roll and I kind of have to agree. More just an aesthetics thing. If you want to take a look my site is www.patagoniahikingguide.com and the post is the backpack review on the home page > there's just a big picture of a backpack there. I think I'll just remove that picture from featured images and that might look better.
The meaning of featured image in some themes has different meaning than in others, so indeed just remove the image and it will be fine.

I would like to use a map from Nat Geographic on my site. Is this permitted? If so, do I need to site the source etc and how?

I always try to give credit for anything I use from another site. For images I use wylio which gives you the code to plug in to WP with all the credits included.
You can add a caption when you insert the map image to say where it is from and if you want you can have it link back to the source.
