You can try Tablepress; you would build a table and then input a shortcode within your blog posts and pages.

I've tried first the block editor.
And yup, it works with fixed columns. But it cuts out some words and makes longer text challenging to read.

The only one that I know of is NinjaTables Plugin, it can help with mobile responsive tables without coding in CSS. I have not tried it but thats the one I've seen others using it.

Is there a way to custom-make landing pages for each blog post CATEGORY? If there is and I somehow missed it here using the wrong search phrases, please share the link(s).

You may view them on your mobile via Appearance > Customize; are they currently not? Is your theme responsive?

You may input "landing page magistudios" in the magnifying glass top menu to access resources.

Not sure why you feel you need a landing page beyond the one WordPress offers.
For example, if you were to use a category in your menu as an option for your visitors to access, then EVERY post you've tagged as being in that category will appear like a blog roll so that viewers can select the one they are interested in.
An example category might be "recipes".

I already have them (categories) up in main menu. But, the section is too bland. It needs an uplift and I simply want to keep things uniform.
It's not a train smash though --- I can live with that.
I thought there could be a solution out there I'm not aware of.

Considering how many visitors actually come to our blogs, the menu might NOT be as vital as you may think it is... though I wouldn't remove that either.
This is why internal links are so vital to helping to keep your readers on your website.
Spending time on making things look more uniform then the preset blog roll for categories, will take time away from your ability to create content to attract visitors.
If you're still determined to create a different look to the blog roll for categories, you could find a landing page plugin to help you accomplish that.
Sadly, depending on the amount of fussing that you want to do, you might end up spending HOURS of wasted time on something only you will be able to appreciate.
Plus... the more plugins added to a WordPress website, the more potential you'll have that your site may not load as fast as it did previously.
However, in the end, that decision is yours to make.

I used to use a plugin that displayed the post UPDATED date, but I found that was one plugin that I really did not need.
Instead, whenever adding new information to a post, I would add it to the bottom of the post. As a example:
UPDATED: [today's date}
Info added here...
The UPDATED, I make sure is in bold text, to make it stand out to readers.

Nope!!! No negative effect with Google
Although, I do know some people say that changing the date mucks about with the coding on WordPress... so most people now will have an "Updated Date", so the article shows original published date and then the "updated date"... you can use a plugin for that!
Tbh, Google and the search engines will be fully aware of when a url was originally published, irrespective of the date on the article.
The date change (or updated date) is actually more geared towards your readers than the search engines - basic human psychology - you see two articles, one was written in 2019 and the other 2023, probably 99% of the time people will click on the "fresher" content.

You can do this through the quick edit section of your list of posts.
If you hover over the post in the list, you will see quick edit, which allows you to edit things like the title, slug, date, and time.

After making significant updates to a post, I changed the dates, but it did not have any comments, and I posted it a week earlier.

However, the "Replace publish date" function doesn't seem to work for this plugin
