I really wouldn't recommend trying to handle email from within your own site, it's likely to just end up getting your domain blacklisted.
I'd suggest signing up to an email and autoresponder service, such as AWeber http://www.aweber.com (premium) or MailerLite http://www.mailerlite.com (free tier) and manage subscribers that way. These types of services provide code for you to put in your site that will generate a wide variety of opt-in forms.
