if you want to reset the tasks, which is what I think is what you are after. Then only way would be to uncheck them. That way you can restart the training and follow along completing each task.

I do not believe there is the functionality to reset the tasks bit

Simply just start taking the lessons from the first one and progress from there.
I know you will see that you have completed the stages but that doesn't matter as long as you take a note where you finish you can then go ahead and start from that point.

Yes, the training is at your own pace. You can restart, repeat, or keep going. So, yes you can restart the training.

Now, as far as the dashboard re configuring itself. I don't think so, I have taken the training several times and the dashboard has never started over the progress status.
