Ladenia Kimolou - The Greek Pizza
An original pizza-like pie, ladenia is made on the island of Kimolos since the Venetian era. Its characteristic flavor comes from Greek virgin olive oil and fresh, mature tomato.
Ingredients:
- 500gr. (Approximately) flour for all uses
- 1 sachet of powdered yeast (or 10g of fresh yeast)
- 1 cup of lukewarm water
- 2 onions dried, medium, finely chopped
- 3 tomatoes ripe, medium, cut into very thin slices
- 1 cup of olive oil
- Salt Pepper
Implementation
Dissolve yeast in lukewarm water and add ½ tablespoon of salt, 4 tablespoons of oil and a little flour. Knead by adding as much flour as needed until it becomes an elastic and soft dough.
Cover the dough with a towel and leave it in a warm place until it doubles in volume.
Grease a 32 cm diameter round baking dish and place the dough in the middle. Open the dough with the palms to spread and fill the pan.
Apply tomatoes and onions on the dough. Add three to four tablespoons of oil, salt and pepper.
Pour the oil with the remaining oil and bake in the oven at 180 ° C for about 1 hour.
Bon appetit!
