I am struggling to select the exact keyword because there are quite a few related seemingly good keywords.
For example, I have one keyword with QSR 100 - Avg
Go with the upper one. If your article has perfect SEO, for those exact keywords you will be ranked to page 1. But there is an issue, if the pages that are already ranked is from bigger websites, then you should consider going for multiple keywords.

The first one you have, would be ok, however you may find it slightly harder to get on to Page 1 and near the top of the results, with an SEO of 89. It’s still a good keyword to target, it will just take time and effort. The content you write, will need to be very focused on your keyword & topic. Once you get to Page 1, you can hopefully expect 17 of the 96 monthly searches click on to your website.
The second one, is the one I would target for a new website. You can expect to get 9 out of the 48 monthly searches actually click through to your website. With the SEO of 97, you should find it quite easy to get ranked on to Page 1 of the SERPS.
You might be thinking a maximum of only 9 visitors a month is low, which is correct. However, if you’re writing 1 blog post per day for 3 months, based on similar keyword stats, you’ll end up with about 100 posts. Times that out, and you’re now getting 900 unique monthly visitors per month.
As your website is now starting to gain traction, you will be ok to start targeting your first keyword. If you then focus months 4-6 on those types of keywords. Again, 1 blog per day for 3 months. You can then end up with a further 1,700 monthly visitors. Adding all 200 blogs together, by the end of month 6, you should be up to around 2,600 unique monthly visitors.
Obviously, the numbers above are only based on the two keywords you have provided, and based on effort being applied daily for 6 months.
Also, as mentioned in other comments, you do also need to see which websites are listed in at least the first 3 positions on Google. If they are very popular sites with high authority, you may find it hard to beat them with a new website. However, your site will soon become an authority, and you will be able to beat them over time.

If you can find keywords with expected traffic of 30+ and an SEO of 95+, you’re definitely on to a winner, especially if the SERPS don’t contain any authority sites in the first 3 positions :-)

I went live with my website recently and realized that tags and archives have got index by google. Should I worry about that?

It isn’t usually a massive concern if these get indexed, but personally, I disable them, as I find content only is better.
If you are using the All in One SEO Plugin, there are tick boxes in the settings, that you can deselect for these types.
You can also manually update the robots.txt file if you prefer, and set then to NOINDEX.
Once you have made the changes, you can go in to your Google Search Console (a.k.a Webmaster Tools), and remove these pages from the Index. This will remove them for at least 6 Months, abs then Google will follow your settings you applied earlier going forward.

Google will get to it as long as you went though the sitemap process in WordPress. This is not absolutely necessary, but it helps to speed up the process.
Another technique is to enter your post using the URL Inspection Feature in Google Search Console. This is by far the fastest way to get your URL post indexed.
Both of these techniques are taught in the OEC course as well as in the webinars by Jay that can be accessed via the Live Events tab on the left.

It should be crawled by Google without you needing to do anything. But you can type in your URL in Google Console to request indexing to speed up the process a little. That's what I personally do.

I generally get indexed quickly when i am consistent about making new posts! for example, if I write an article, a couple of articles later, the original gets indexed. from my experience, but Google's SEO algorithm might give you different results
