A document in site content is a doc until it gets published, you set it up whether you want as post or page
Posts are included in your blog roll with last written first and pages are static.
Examples: About Me is a post and so is your informational and reviews as per your chosen niche are also posts.
Privacy Policy and Affiliate disclosure are typically pages.

If you made a mistake, you can always use the Post Type Switcher, to switch a page to a post and vice versa
Quick edit and choose Type and update.
Once done, you may deactivate and delete.

When I was starting, I also struggled to remember the difference between posts and pages. And when to use each one of them.
Something helpful for me was to figure out if I wanted comments on them. If I did, then it would be a post. If I didn't want comments on them, then it would be a page.
But, doing some tricks, you could also allow comments on pages. But it's not like that by default. So this rule may be a way to decide if something should be a post or a page.
