The first part of your question answers itself. You said "...is something I really love talking about and have quite a bit of knowledge on". If you love it then you'll be motivated to continue with it. So GO for it!
Second, you mentioned that it "makes me seem I'm just really trying to make quick money". Yeah! That's why you're starting your onliine business right? To make money. Don't apologize for this and don't feel guilty to accept other people's money for a product or service you provide.
I don't know diddly about jewelry. I have my wedding ring and that's it. But, my wife does. She likes checking it out. Her friends too. There are millions more just like them out there. If there was a site they could go to that provided value (ie YOURS) and they could trust then there is no reason they wouldn't buy from you.
The last part of your question, more of a comment really was "...or that I'm just going after something that's just expensive..." My take on that is...So What?! People buy expensive products too. If you're the person they look to for information on buying expensive jewelry and then they buy from you - isn't that your goal?
So, nobody can tell you which niche to choose. That's up to you. But, if you choose a niche you love then you'll be more determined to plow through the roadblocks and bumps in the road that will inevitably come up. That's where these forums are helpful - to get you over those humps.
Lastly, don't worry about what others think. Do what you love. Have FUN and, as the old saying goes "Do what you love and you'll never work a day in your life."

As long as it is something you can continually write about on a regular basis and there are plenty of regular products, you are good to go.
Quick money doesn't exist, go with something you know well, it will become long term and sustainable. It should help create a long term business and popular website for you :)

No you shouldn't.It is best to go into a niche you have tons of knowledge about.It makes it easier to write out your posts as well as easy to assist people when they ask you questions in connection with your niche.
And with regards to the price tag of the product you plan to promote, the price shouldn't matter. Because people make purchases based on emotions and gratification not based on the price tag
Thank you for not only the prompt reply, but for the last statement you made. I have a passion for jewelry and I feel that because most people associate that with $$ that it wouldn't be such a good niche. I love talking about certain metals and gems, but I felt it was just too over the line. You're right, people make purchases because it makes them fulfilled or someone they care for happy. Thank you!
