At the beginning of the training, it's recommended to pick one very specific niche. The reason for this is that it helps find your audience quicker and usually leads to ranking quicker in Google search.
Based on your situation I'm assuming you'd like to have more of a blog that covers several different topics (For example: DIY, Food, ETC,) ?
In that case I would just focus on one category while you work through the training as you learn more and get the knack of creating content you can branch out into the other categories that you'd like to talk about.
But to answer your question, I'd recommend only having one site as long as the topics are somewhat relatable and I'm assuming that they will be!
