I am on course three lesson two and I need to sign up with an affiliate network to continue. My problem is that in order to sign up for one of these networks I need a company.

You don't need a company to be an affiliate marketer. When they ask for a business name just give them your own name.
Okay so I just give the my name and use my SSN as a Tax ID? What if I decide to hire content writers would I need to file for a company then?

You would hire an accountant well before you file for a company and heed his/her advice.
