Confused - One of those stupid questions.
Having just seen this blog:

Is this correct? Should we be making this sort of change to our back office?
Also
I have just noticed that on my SEO under All in One SEO my settings under general settings are set:
as Use Original Title: set to disabled. Is this correct or should this be enabled?
Is it possible this changed under an upgrade of my theme, that somehow it changed on its own?
Your advice would be welcome.

Use wp_title to get the title used by the theme; this is disabled by default. If you use this option, set your title formats appropriately, as your theme might try to do its title SEO as well.
You can enable it, but you have to set your title formats appropriately. Otherwise, your theme might try to do its title SEO as well. The chance is two titles for one post.
Disabled is the right choice.
I have never done any of those changes that are mentioned in that other blog and have not had any issues with my SEO.
As for Use Original Title, I have always had mine set to Enabled, which I believe is the default setting.
You should click to Enable that setting so you do not have to re-type in your entire Page/Post titles.

I use the Rank Math seo plug in Trevor and find its much better. It has a checklist for SEO and gives a score out a 100 so you can adjust it before publishing.
So can't help with the All in one SEO on sorry.
Maybe checking with Site support would be helpful before making any changes as Florentino said.
Also Rob ( boomergp08 ) always has excellent advice.
