I once had issues with back pain and the physio recommended a series of exercises wich fixed the problem. Am not sure what direction id go with that in terms of a niche. Any ideas?

Maybe home gardening in general? Then you could develop your content around the pros and cons of irrigation systems. Natural sunlight vs l.e.d systems. Green house vs green room mayb. Alot ov good points.. All the best.

How would I approach photoshop, digital imaging as a niche

WOW! That is a really broad subject! I am pretty good at Photoshop, and there is tons of stuff to know. Because Photoshop is so complicated, maybe you could do a lesson on each aspect of Photoshop and try to break them down so they are simple enough for a 1st grader ( just using that because most people have trouble comprehending Photoshop.) Myself included in the beginning. You could write about Photoshop for years! Also, then you could also sell Photoshop products on your site. I do not know if they have an affiliate, but you could check that out.

Connie (BetterDays2C) has give you excellent advice.

The back pain niche is huge and you would need to become well informed in at least one aspect of it.

As you say physio exercises fixed your problem, you can focus on that in the beginning, explaining to your readers the type of back problem you experienced and then outline the exercises that fixed the problem for you.

I had back pain and treatment that fixed it. But that would not be enough for me to want to build a niche around it. ~Jude

That is a big niche. Try to narrow down to just one specific niche that you know a lot about. I will illustrate, the general niche is "United States" But from there you decide to narrow that down to Texas. Then narrow that down to "Dallas". Then narrow that way down to "suburb". BetterDaus2c in his answer to you, gives you several things to try. let's just say you like and have done, or want to know, or know about exercising for back pain. You know a lot about it, and you feel strongly about it. You can come up then for your web, "How to get rid of back pain easily" or "How to get rid of back pain, while still in bed." Or---So figure out a question that will help people and you are well on your way. Hope this helps. I have had to do my niche all over again, because of not understanding what I was doing, so like it is said, "Once you succeed, they try again" but this time, only if you are not happy with your niche. Best to you.

I have suffered from back problems since almost killed in a car accident in 1990 Finally had major surgery. Millions of people suffer from some sort of back issue. You could discuss all the reasons for back pain, exercises for back pain, heat vs. cold for back pain, you could actually research the different surgeries recommended for different issues of back pain. There are also a lot of products to advertise for back pain. using pillows during sleep to alleviate back pain. If you do research, I believe you would open up Pandora's Box and find many ideas. Remember, though, you should pick something you are passionate about. Are you passionate about helping people with back pain? If not, you might want to re-evaluate. You are going to be writing about your niche for a very long time! Good Luck!
