What I am cooking for Sunday ?
Something to share with you. This is one of my favorite recipe for this Sunday.
Lovely dish for a family meal. Everything is baked together, so that the potatoes absorb all the different flavors, especially that of the lemon, and the lovely juices and fats from the chicken.
Serve 4
Ingredients
1 organic chicken
1 head of garlic
1 sprig or two of thym and oregano
3 lemons.
1/4 of extra virgin oil
1/4 of water
salt/pepper
Preheat the oven 200o/400oF
Place the chicken in a large roasting pan, then tuck the garlic cloves and the herbs inside and around the chicken.
Peel potatoes and quartered them lengthways, if they are very large, slice them lengthways into thinner pieces.
Arrange the potatoes around the chicken, pour over the mixture of extra virgin oil, jus of the lemons, and water.
Roast the chicken and potatoes for 30 minutes, carefully turn the chicken over, baste, season with salt and pepper, sprinkle over with dried herbs, oregano, thym.
Then reduce the oven temperature to 190o C/375oF
Serve with vegetables like green beans or a crisp leafy salad.
I usually prefer the organic red potatoe, and don't hesitate to use a lot of garlic, it is very good for your health, try to add in your daily diet in salad, eating raw garlic, the best!

I do the same with the exception of adding a mirepoix to the roasting pan as it makes the gravy more flavourful for me.

We do each separately but your way really looks good, I can almost smell it from here lol.

I do a similar dish on the grill in cast iron cookware and I add about 1/8 cup of chicken broth as well. Your recipe is awesome. I can taste it now.
