Sunday's Recipe
Marinated eggplants with raisins and pine nuts
4 small eggplants, halved lentghways
1/4 of cup of oil pomace to brush the eggplant
Half cup of extra virgin olive oil
Juice of 2 lemons
2 tablespoons of vinegar (or choice, balsamic, or red wine vinegar)
3 cloves of garlic, or more
1/3 cup of pine nuts
2 tablespoons of raisins
large pinch of dried chilly flakes
Feta cheese, or goat cheese
Salt and pepper
Preheat the grill to high. Place the eggplants in the grill pan, and brush with a little of oil pomace oil. Grill for 10 minutes, turning over.
Make your marinade, put the extra olive oil, the lemon, garlic, pine nuts, raisins.
Add the chilly flakes, salt and pepper, mix well.
Place the hot eggplants in large bowl, and pour over the marinade.
Leave to cool, turning the eggplants once.
Serve cool.
