Prawns with tomatoes and feta
The latest blog I wrote on my website, is about the heath benefits of oregano, oregano is a wonderful herb, both to use in your cooking and to use therapeutically as needed. Oregano is popular in Mediterranean cuisine.
Here a delicious recipe you can try.
Prawns with tomatoes and feta
Serve 4
Ingredients:
3 teaspoons of coconut oil
1 onion, chopped
1 red bell pepper, seeded and cubed
675g/1 1/2 lb ripe tomatoes, chopped
1 tbsp oregan dried oregano
450g/1lb raw tiger prawns (peeled and deveined)
2 tbs finely chopped parsley
75g/3oz feta chees, cubed salt and pepper
1 Heat the oil in a pan, add the onion and saute gently for a few minutes. Add the cubed red pepper, cook for 5 minutes, stir in the chopped tomatoes and oregano, then season with salt and pepper. Cook for 15 minutes, stirring, until the sauce reduces and thichens a little bit.
2 Preheat the oven 180 oC/350oF
Stir the praws and parsley into the tomato sauce, pour into a baking dish and spread evently. Sprinkle the feta cheese on top, the bake 20 minutes, drizzle little bit on the top with extra virgin olive oil.
Serve hot with a fresh green salad.

I understand what you mean, coconut oil is the best when it comes to high heat cooking because is close to 90% of the fatty acids, saturated, which makes highly resistant to heat, I used extra virgin oil for salad dressing, or topping my dish, oils rich in omega 3: nuts, linen, canola, those oils with omega 3 are very sensitive to the light and heat.Of course, you can cook with olive oil, but not the extra virgin oil.

I used some key west shrimp about a lb. and deveined them, I left the shell on. Seasoned them with fresh lemon, sea salt, pepper, garlic.
In a pan I melted some organic butter, added extra virgin olive oil, fresh garlic, a bay leaf.
Add the shrimp to the pan season with paprika, cayenne pepper, and fresh lemon.
Cook about 5-10min
Hi Jerry, If you want to, put the prawns on the grill, prepare the tomatoes mixture before, and serve with the grilled prawns.
