Jerusalem artichoke is a good source of iron, contain 643mg of potassium which is essential for overall health, in addition to reducing excess sodium, is especially excellent for people at risk for high blood pressure, beneficial when it comes to the intestinal tract.
I AM SHARING TO YOU A GOOD RECIPE FROM JERUSALEM ARTICHOKE.
For that, you will need:
2 tbs extra olive oil
2 cups red onions, chopped
3 cloves garlic, chopped
2 cups of Jerusalem artichoke chopped
1 tsp grey salt
1 lb, (454g) beef, chicken, or turkey, whatever you prefer.
1 quart of cup vegetable broth
1 cup of water
fresh rosemary
Cut tubers into 1-inch pieces, mix with olive oil, the thyme, garlic, and sea salt.
In a large bowl, add Jerusalem artichoke pieces and toss to coat.
Saute, onions, garlic, Jerusalem artichoke, carrots for 5 minutes, (then take off the carrots), you will add the carrots at the end, they don't need to be cooked too much.
Then add the meat, broth, water, rosemary bring to a boil, then reduce to low cook for 40mn.

Thanks, I was raised on a very limited diet-meat and potatoes! with a few vegetables from time to time. Was recently at a buffet with artichoke on the table and enjoyed it along with the asparagus. Just didn't know how to cook it. Thanks..

I slice them up and mix with grape oil, crush fresh garlic and thyme. (We grow our own garlic and thyme.) Sometimes I use a bit of basil as well. I add some broth and back in the oven. My family loves them. We grow most of vegetables and fruits.
