Have a piece of tart!
Strawberry and Ricotta Tart
Crust: one cup of unbleached all-purpose flour+ dusting+ pinch of salt
three tablespoon of sugar
One stick ( 1/12 cup ) unsalted butter, cold, cut into small pieces+ for greasing your pan
In a large bowl. whisk together flour and sugar+salt+butter and rub the mixture between fingers until it resembles coarse meal
Make a wheel in the center, add two tablespoons of water and mix.
Knead dough three times flatten into a disc, wrap in plastic, and chill one hour.
Butter a 9 1/2 inch pan
Flour your workplace surface, roll out dough to a 12 inch round
Put it into a tart pan, pressing into edges
Chill again 30 mn
Heat oven 400o
Rack in middle
Line tart pan with parchment paper, fill with dried beans, bake 10mn
Remove parchment and beans, and continue to cook until the crust is pale golden ( 5 mn )
FILLING
1/12 cups fresh whole-milk ricotta cheese
Four large egg yolks
1/2 cup sugar
1/2 cup sugar
1/2 teaspoon orange water, finely grated zest of 1 lemon
3/4 pound organic strawberries, sliced
Confectioners sugar for dusting
Reduce oven temperature to 350o
In a large bowl whisk cheese until smooth.
Add egg yolks, sugar, orange, flower water and lemon zest, whisk.
Spead filling into cooled tart shell, bake about 35 mn.
Let cool, arrange strawberries in concentric circles atop tart; dust edge of crust with confectioners sugar.

That looks delicious. Hope things are going better. I know when I am struggling and having doubts I need to just walk away and give my active mind a break. It seems like my subconscious mind is slowing churning through the isse. After I step away for awhile (sometimes only an hr or 2) I come back and watch a class or wander around WA and I am ready to move forward again.. What I didn't want to do and thought I couldnt do has changed and suddenly I can't wait to get started. I guess my brain finally catches up to everything I have been trying to absorb. So far there has always been something I find within WA that activates the motivation again. Hope to hear a success story from you soon.
