I think these are default and specific to the website however it isn't relevant to my website and I've searched everywhere?

I would do what Abie said, go to your customize settings for your theme and you should be able to change this there. I have some plugins that if you just leave the field box blank it will not show up on your site. This should be the same with your theme.

The theme of my website I am happy with. The footing of my theme has the brand of a business that has used the same theme in the past along with the copyright. This is what I want to remove as it has no relevance to my site.
they will be able to be changed under the appearance>>customize menu...
with over 8000 themes the best way of finding out how to use tem is to goto hte documentation provided by the designer at their home page....
if there is no link to hte home pgae then a quick google search for wordpress [theme] doccumentation will help you find it
it can get very frustrating to find all the little bits within the themes to customize...you may find this under header or further down in theme options...

I have installed theme on our test site
In Appearance > Customize click anywhere on the theme one click and you'd see six pins where you click on them and it will display where you can edit them ( see image)
If not wanting them displayed you can leave them blank.
Customizing > General Settings > Header Settings Header Settings
