I have designed a header image in canva to the size that wordpress suggests, 1600x200, but when I add it, the bottom is cut off. Is there a way in the code that I can enlarge

You would have to edit your theme's css to accommodate your header image. It totally depends on your theme, as I have changed themes and they have different header codes.
