My about post has an uncategorized heading/title, how do I remove this from view?

Check your theme customization. You may be able to change it there. In the Dashboard go to "Home" then look for the "Customize" icon on the page. Or go to Appearance/Customize.
Also, In Wordpress, "Uncategorized " is the default category. If you go to your Dashboard under Categories, you can create new categories as well as rename the "Uncategorized."

Log into you website and click on posts. When the post you want to adjust, click on it and on the right side, the categories will show up. Just pick one or create one and place a check for the post you want for that category. Do this with any and all posts.
