After you press the "publish" button your post should be live. You can test it out by going to your website and looking at the most recent post.

Back in lesson 3 I selected my theme and clicked on the picture, but I have just checked back now that I am on lesson 7 and I find that the picture is gone, or perhaps it was n
Not sure what you are saying about picture. The theme can be changed any time but it can be messy if the site is big and you have images and image galleries. It is less messy if the themes have a similar width.
You always need to add your own images whatever theme you choose.
And you can change your theme if you're not happy Choose a New Theme

1. Make sure it is responsive, this is the main thing.
2. You can always change it later (but better sooner than later).
3. Not everything can be customized easily.
4. It is unlikely you will ever find one "which exactly fits".
5. Look around what others use. How to know what theme they use? Here is one tool (there are more)
