A little bit of history
Thank you for your blessings young man, I enjoy running the hotel for 14 years in Weston-super-Mare, some of you may even know it, the Chairman's choice hotel, Manila Crescent, up by the Marine Lake.
It is gone now, sadly, been reduced to a building site.
I could write a book about the chefs I employed during those years, and of course I gained a lot of experience myself, because I always covered for the chef’s day off, in addition, most afternoons, I would produce a couple of trays of something for the desserts.
English breakfasts for 80 people then later a roast dinner and a hot desert, those were the days.
