I have the same question. I try the demo mode, but sometimes not everything loads the right way. Maybe it's just trial and error. I think from a design standpoint, pick colors that will go best with your niche.

No problem. I used to love elegant themes. They are great. However they are like $249 for lifetime usage. I'm going to try to make due with the ones provided at WA.. they seem decent too.

Having page Builder like Elementor will help with a bespoke page layouts

I am wondering what the general practice is for website names. Is there a difference between your domain name and website name? Should it be the same or different?

It doesn't necessarily have to be the same, but it is a good idea :)

I like to brainstorm words surrounded by my niche and also thesaurus.com is a great tool if you cant think of anything else.. then i start putting together words trying to keep it simple and catchy.. then i look it up on google making sure I'm not using something already being used.

Let's look into the different aspects:
In the training
We learn as early as lesson 4, that We simply do not need to overthink this step and just retype what You just had picked as a domain. The Site name can be changed at any time as well, so no hassle there.

In terms of SEO
Domains are not ranked and it all comes down to Your Meta Title & Description, as for Your content as well.
What I mean by META, I don't refer to this as the outdated method of rambling a lot of terms to be scored on google ("meta tags").
No, what I mean is the 'appearance in search results'.

Meta Title - Headline
Meta Description - Body text

All aside from that.
To help visitors remember Your brand and URL, I'd say it should be a set 'thumb-of-rule', preserved for very little exceptions.

Perhaps, an exception
JessicaReviews,com may not be available, for example. But JessicaReviews2018,com may be as well. - Now, don't do this as You get limited, and the numbers are just a peeve to deal with in URLs.
But, just for the educational situation of it - 'Should 2018 appear in Your company's name?' Of course not, because what happens then in 2019 or 2020 (etc, etc...)?

I must agree with you about the keywords!
I'm still not too good with them, but I do have a better understanding of them now.

When I started here two months ago, I really didn't know what a keyword was or meant.

I basically hung out in jaaxy for a few days and then Kyle hooked me up with this real deep lesson on keywords alone! When I got finished with that lesson It was like, my way of thinking starting to change towards the right direction. LOL.

I had a much clearer understanding Of what keywords are and how they are used and I also learned how to really dig down deep for them in Jaaxy. I think It's all pretty interesting stuff and I'm having fun learnnig it.
