What I would do is start Google searching to see if there are any forums out there discussing using coupon codes, to see if that is what is happening.
Personally, if I'm looking for a product that upon checkout suggest they may have a coupon code available, I then open another session of my browser and Google search for a coupon code for that product.
Once I locate a coupon code that works, I leave that site... so in fact that would increase their bounce rate for sure.

Yeah that is how I go about coupon codes as well. I have been searching on google but haven’t found too much info on it.
The only thing that MIGHT keep your readers from simply gleaning your coupons is to NOT make it a keyword (use only once per post) and bury the code within the details of that product... let's say, within a paragraph of information.
That way, you are less likely to have scrapers taking your coupons without buying from your affiliate links... though that too may still happen.

I had a question, within my posts if I were to use images with the text within it for the paragraph headers would that hurt the seo of my post?
If you use images with text in them, then be sure to use the text as the alt text so people who are visually impaired and the search engines know what's in the images.
It is best to have some headers in there, they do count towards your SEO especially if they include your keywords. :)
