My site is indexed on page 21 I don't get the correlation between keywords and indexin
Every person, wherever they are in the world will see different search index results. Google takes into consideration each individual's browsing history and geolocation. What I see in Australia will be totally different to what someone in UK sees. Even someone who lives next door to me would see different results because Google knows what THEY are interested in.

Does that mean I cannot trust Jaaxy keywords, with my example the word for word keyword should place me higher with only 29 using that exact keyword phrase?

No tool is going to predict exactly where your post will end up on everyone's search results because every single one of us will get different search results.
Your post targeting a particular keyword will be different to my post targeting the same keyword because your content is different to mine. Where your post ends up depends on a lot more factors than I can cover here. See Jay's videos for some great SEO tips.
All Jaaxy can do is give you a reasonable ball park figure which you can compare to Jaaxy's (ball park figure) results for a different keyword.

How do I use categories and menus to organize my blog roll?
I have the categories in place, just need to organize them
I'm not saying that it is the best way to do it, but I simply put the word "categories" in my top menu and then arrange the categories I wanted under it in the order I wanted it.

If the categories becomes too huge, one thing you can do is to group those related categories into one category.
There is a plugin called Term Management Tool https://wordpress.org/plugins/term-management-tools/ which can helps you with the task.

Thank you for your help today, small wins add up, tell me if I made all my reviews pages, would that get rid of the reviews out of my blogroll ( I did take your advice and now have blogroll page that I can make use of feature images)
I have a category called "Reviews". As your website grows in size you'll find the menu would get very crowded without making good use of categories.

I have changed the uncategorized to Affiliate marketing as default now I have to work on each post and categorize them one by one. is this done by changing the name while in a post or some other way

Gotta love the shortcuts Geoff. Go to Posts > All Posts and click on Quick Edit for each post. You can tick the category boxes there then hit Update.
Ok, now my posts have categories. Thanks to you I also have a blogroll with exerts and now have to put in feature images where they are missing. My reviews (category) are now scattered among the other post and I want them together on the featured blog page.
I think I have to do this by using menus? need a guide to do this
The blogroll look so much better than just titles
