I came across some affiliate products in ClickBank that i consider promoting, the problem is that some of them along the funnel get the customer email with an opt-in box.

They are ending up purchasing the solution / item you proposed to solve their issue. They would be collecting your client / visitor data.
I would read their terms and conditions and privacy small print.

I believe that as long as you have your affiliate link attached, you should receive commissions for any sales made. You may want to check in the fine details though.

From what I've learned on the Research menu where Jaaxy can be found, you're going to type in your keywords according to your kind of niche and then click on the Quoted Search result (QSR) button, which indicates the number of competing websites ranked in Google for the exact keywords that you typed in and then click on the Key Quality Indicator column (KQI) and it will run the survey and you will tell you the results and its strength.

thanks for your answer but i didn't understand how to measure and compare the top 10 sites and also what metrics should i look for in order to decide if the competition is too high medium or low

OK, let us look at your top section - the business-orientated section.
This sounds like something you have been doing for a while - thus you know 'how' to do it - could you design a course, in Hebrew, about setting up an affiliate-marketing website - using your knowledge? You would certainly have less competition if you did it your own language but, as you said, a more limited pool of interest.
Having said that, according to various sources, there are around 11 million Hebrew-speaking people in the world. Let us say 1/5 of them would be interested in an online business = 2.2 million. If you could attract 1/100 of them to your website = 22,000 visitors. 1% of your visitors buy your course = 220 buyers priced at 150 ILS = 33,000 ILS - not a bad income plus you have their contact details so you'll be able to sell them further courses and/or affiliate programs.
Your 2nd section - things you like or would like to do.
Crazy Cakes - a youtube-based channel would be brilliant here - especially if it is you baking the cakes! You could go seriously cra-zy!
Or you could buy the same cakes from well-known bakers and rank them for taste and appearance etc. - could be a good resource for sweet-toothed tourists.
Exotic places - as you say, will need a lot of research and a lot of images/videos. Monetization may not be as easy as other niches.
Skin Care - yes, Google is looking at health-related niches very carefully and you need to be an authority or co-write it with an authority for it to be taken seriously by the search engines.
I do not know enough about eCommerce to offer an opinion on this.
