I have been with WA for a long time and know consistency is my weakness. However I feel that my niche my be too broad or I am just not doing something right. Can you advice me?

Hi - the first thing you need to do is to start adding content to your website. You have not added anything for eight months, and there are gaps of up to 18 months between posts, therefore Google will assume it has been abandoned, and won't rank it highly.
The posts that you do have are quite short. You need to be aiming for a minimum of 1000 words.
Your niche is quite broad. One minute you are talking about gardening, then babies, then mattresses. You need to pick a specific area relating to sustainability which interests you the most.
