Paul Had It Right All Along!
Paul Goodwin (#17) has been showing us the right way all along, it seems, foraging for wild mushrooms in his forest.
Turns out he knew what he was talking about.
Now new research shows that mushrooms may be the best food to help us fight aging!
They are the best source of the antioxidants ergothioneine and glutathione, which have been associated with anti-aging.
Even common button mushrooms, say researchers from Pennsylvania State University, have higher levels of antioxidants than the average non-mushroom food, and some species of mushrooms have vastly higher levels.
The best one was the wild porcini mushroom, which, in addition, is said to be delicious! It is also a heat-stable food, and its antioxidants are unaffected by cooking.
Many diseases, such as cancer, heart disease, and Alzheimer's may be avoided through the consumption of antioxidants such as are found in mushrooms.
People in countries like France and Italy, who consume more antioxidants in their diets, have been shown to have lower instances of neurodegenerative diseases.

As a kid I loved mushrooms so much I'd get into cans of them like I would sardines to eat. They are a good source of selenium as well!

I love the button mushrooms almost every way. I have seen some of Paul's and I am sure that they are good, but they are also scary looking. But he knows which ones to eat.

No wonder. I once saw a map on which Ukraine occupied a solid part of Russia. People want to believe in what they created in their imagination, Lithuania though, was a bigger state years ago.:)

Thanks, Sue. Just be careful, if you go hunting them. A good field guide would be needed. :)
