It will be because your theme is updating. Use this plugin to add the code instead. Then it doesn't matter if the theme updates. https://wordpress.org/plugins/insert-headers-and-footers/
Make sure you have a good amount of content on the site before applying for Adsense.
Thanks very much!! I actually already applied (it has said to in the training). Do you think they'll get around to approving eventually or is there anything I should do? I have 18 articles now, but way less back then, only a handful. Thanks!

Why is google adsense stuck in the "review your site" phase?

Where exactly are you inserting the code? If you have the code, you should not need a plugin.
Are you using the Appearances > Customize > Custom code section in the left menu of your theme, not your main theme files. Codes added there are retained with updates.
If you add code to the main theme files, it could disappear each time the theme or WP is updated, unless you are making changes in child theme.
