Potatoes Affect the Brain
I think you'd agree that creating content and promoting website is mainly brain work. Of course, that doesn't mean you have to be really "smart", but you do have to USE your brain.
(Come to think of it, having a website is good BRAIN EXERCISE, maybe more so than crossword or sudoku puzzles.)
Potatoes and the Brain
Now we come to the main point.
What do potatoes have to do with the brain?
According to Reader's Digest online https://www.rd.com/health/well... , "Potatoes contain an amino acid called asparagine that, when exposed to high heat, changes to acrylamide, a neurotoxin...."
The recommendation (to prevent asparagine from turning into acrylamide) is to soak potatoes for 15 to 30 minutes before cooking them. After soaking, drain and blot them before cooking.
Hmm, who would have thought?

No potatoes in my house at all as my husband is diabetic. I guess my brain is safe! Interesting post, Jean. I love learning new things!
All the best,
Sue
