Baking Courses definitely a potential niche.If you don't have experience but have great interest on bakery, it is still possible.
There are a lot of bakery affiliate you can join. If you can think something that you could 'niche down', that would be better.
Baking ...........? / course /supplies/ recipes/

I can see that makes 2 sites (1) Baking Courses (2) Baking Online Business. Or are you going to combine the two into one website?
If you want your niche to be narrowed down, I would suggest to focus on one first.
