Some of the best training here I've seen on Alt Images is by Marion (MarionBlack).
Basically, Alt Text is realistically a way to describe EXACTLY what is in the image, especially for those who are visually impaired.
Unfortunately, screen readers are unable to read any text within an image, so they rely on the Alt Text to give them a description of what's on screen.
Whereas, some people may decide to use Alt Text for "keyword stuffing" it should really be used with a visually impaired person in my mind.
So, you will want to describe EXACTLY what is in the image, even if it has nothing to do with your keywords or article in general.
For product images literally just describe what you see on screen (once again keeping a visually impaired person in mind).
e.g. A bottle of (Product Name) slimming pills on a table with a woman looking stressed in the background."
Obviously, it depends on what you can actually see in the image. If there are actual words in the image, place those in your Alt Text.
Some of my Alt Texts have been things like:
"A man and a woman running through a field holding hands".
OR
"A woman with her head in her hands. She seems as though she is upset."
