I'm about to start adding links into my site. Does it matter if links are added to posts vs. pages? How many is a good number to avoid being seen as scam?

It doesn't matter if it's a post or a page. Depending on the type of article you're writing, you can add several.
For instance, if it's a comparison post, or "best of", then you'll probably be adding a few.
My rule of thumb is if I'm consistently promoting one product, I write a great review of it, and link my other posts to it. This is called a "bridge" page and helps to not put affiliate links on every post.
You could also add an advertisement in your widget area down the side, and put your link there. Then it shows up on all your posts.

So, it doesn't matter how many posts I have that have links in them, right? As long as I am not putting more than 3-5 links in one post/page?
If the links are relevant to your article, it's ok. Just don't overdue! It's always nice to have a few posts without affiliate links too.
Linking to other posts on your site is also great for your SEO, so don't forget to do that too!

Put affiliate links in product review posts, and make sure these posts are detailed enough that they provide all the answers your visitors need, without having to exit your site to look for answers elsewhere. It's fine to place 3 links for a 1,000 word post, because you want to catch the opportunity whenever the reader makes a purchasing decision.
As for more general posts, like info posts and how-to, you can do internal linking to these product review posts.

Yes. I have a post that I want to show up in multiple areas. My site talks about wine. So, on my menu I have homepage, and a wine page. I have a drop down option from wine that says types of wine. My post "Types of Wine-Knowing the Basics" I want to show up on my home page (which it does), on the Wine page as a post (which it doesn't) and then in the drop down option Types of Wine. I tried to create categories and add them to the menu but its not working how I'd like. Sorry if that sounds confusing, let me know if it doesn't make sense.

After or during your post creation, you can then designate a category for the post. It will then appear in that category. You can add categories to your menus, as blipka explains below. :)

You can add to both post or pages. Usually 1 link per 500 words.
